I had visited their home a couple of months ago. The sweetest people I've ever had the pleasure to meet! Because I'm single and don't eat a lot of meat but enjoy a good piece of meat a few times a month; they were extremely helpful in helping me choose pieces. The filet mignot melts in your mouth and very juicy and flavourful even being well done. The chicken...WOW I actually cried because it's the first time I've had chicken that smelled like home (when my mum roasted ckn) (I'm 74) tasted like chicken! Yes, there is a huge difference....I WILL be ordering more chicken and beef! Thank you for your hospitality when I popped in and being so helpful and kind.
We joined St. Croix CSA about a year ago, after they were mentioned in a Times Union Steve Barnes article (we too enjoyed Troy NY’s Donna’s dish using St. Croix’s chicken). Indeed, St Croix’s chickens are consistently a cut above—flavorful but not gamey, tender, and sweet. Their chicken also makes a wonderful, clear stock. We found the CSA itself to be very customer-service oriented, and their online ordering system is easy to use. While we joined St Croix CSA primarily for their chicken (and their expressed humane approach to raising their animals), the farm also has beef and other products that are most definitely worth trying. Meeting Eva and John, owners of St Croix, has been a pleasure and joining the St. Croix CSA worth it. TIP: For a super easy recipe for roast chicken, try Mark Bittman’s (but do read user comments); air dry chicken in refrigerator for a couple of hours before following recipe to yield even crisper skin. Bought some meat and so far it's been great. Pork chops were great and the beef hot dogs...yummy. next is a whole chicken. Can't wait. We also ordered 1.5 inch thick and 2.0 inch thich ribeyes and ribs ...etc best part no indigestion from any of the meat products. That tells me it'd real, Real all the way to the bone and it comes from 1 animal. Not 100 all mixed together! All I can say it's not messed with.
This is the highest quality meat you will find anywhere on the planet.
