The beef from Short Cattle is top notch! We have purchased grassfed beef for several years and this one is extraordinary. Our family loves the flavor, juiciness, tenderness, and did I say, flavor!? Whether the meat is slow-cooked as a roast, dry aged and smoked, fried with tallow or butter on a cast iron skillet, or made into a beef stew, the flavor, tenderness, and deliciousness remains. The fat to protein ratio is superb! You can season the meat lightly with salt and pepper or load it up with spice, we love the beef Short Cattle offers as the taste and texture of their meat is unlike any other. The purchase of grassfed beef is super important to our family. It means that the cows will be healthier, treated with care, and eating their ancestral diet, not genetically modified corn and soy. It means that the cattle won't be pumped with hormones or it's meat laden with antibiotics. We really appreciate the care that Short Cattle has for their cattle, starting with the soil on their land and how it translates to better, healthier, and tastier meat!
