The best pork chop I have ever had the honor of cooking! It was absolutely delicious, packed with flavor and juicy!!! Seared first in cast iron skillet, rub with country seeded mustard, coat with mixture of; brown sugar, ground mustard and mustard seed, garlic powder, dried thyme and sage, with some healthy dashes of salt. Prop up bone side, cook at 400 till caramelized, tent with foil till reaches 125, take out and let rest till reaches 145. Soak each side for 15 min in drippings and serve. So so delicious!!
Such delicious pork! I picked up the miso scallion sausages and the Yucatán pork belly roast which is wrapped in a banana leaf. I slow cooked the pork belly in the oven for 5 hours and made a delicious ramen. Found them at Fort Greene park farmers market.
