This place is really cool. Everyone is friendly. I need to carve out some time for a Saturday and watch some butchering. I heard these guys are the best they our middleman for a small farms raising the best livestock in Ventura and surrounding areas. They also process game. I can't wait to get to know this place better. I would just wish I lived a little closer. I'd probably bother them hanging out so much haha

I bring 15 steers to Kent every year. He ages them to perfection and customs cuts each to our customer’s specifications. He walks any first time buyers through the cutting process and makes sure they’re happy. No one better! Thanks Kent!

One of the best butchers on the West Coast. A third generation full service butcher. Wild game. Custom butchering. Dry aging. Full service processing. I’ve personally worked with Kent over the last 15 years to find the very best grass fed beef you can possibly imagine. He has helped my discover ranchers who have mastered the art of breeding grass fed steers that have amazing flavor and tenderness. Over the years he has introduced us to farmers that hand raise some of the best pigs and lambs. Because he is USDA certified, his facility has to maintain the highest standards. Onsite slaughter. Cut and wrap (really vacuum seal so it’s amazingly easy to site and then defrost). Local sourcing is so important. It cuts out the middleman and you can directly know the farmer. And because he is a small operator who personally is onsite your animal gets the most humane handling possible. The custom cuts Kent suggests make an amazing difference as well. These obscure cuts are amazing delights that would normally be lost in the grind. The old school recipes handed down from his grandfather for sausage, bacon and smoked meats will hook you as a forever customer.

Ken talks a big game and makes fun of all the “lesser thans” and white coats. However, his butcher product is abysmal. Flank steaks and chuck steaks cut paper thin with holes in them. Rib eyes and New Yorks with 50% thickness variability. Knife cuts and flaps in filets. His shop cuts meat but that’s about it. Don’t expect meat you’d want to present

Holy crap!!! I can't tell you how much I appreciate GREAT GRASS FED BEEF !!! Im amazed at the quality of meat I've gotten here. Please keep up the good work, we need good places to get real food. I don't think I have ever had steaks like this not even from really good steak houses. I've had a hard time trying to find quality beef that didn't feed there cows GMO products. We drive about an hour and half to get the beef, but it's well worth the drive.

In 2020 I paid for a 1200 pound Angus steer plus the processing fees. The five boxes of cut meat were loaded into my truck. I inquired about the small number of boxes and was told "that's all of it." Being suspicious, I weighed all the boxes when I got home. It only weighed out at 300 pounds, which included the box of bones! This meat cost me over $11 per pound, most of which was hamburger. I know Angus usually has a yield over 50 percent of standing weight, so where did the rest of the meat go??? I know I got cheated. As a result I will never trust a butcher with a store front again.
