Tuxedo farmers market. Picked up "cubed beef" for stews because they were sold out of brisket. I asked for the fatty options of all the cuts. Needed the option with the most fat. Got extremely lean instead. But. We all have bad days. Small town local ag needs all the support it can get so ill keep it at 5 stars but next time I ask for fat give me fat please.
The ONLY way cows and lambs should be raised nationally. Small localized farms creating sustainable solutions by providing a healthy environment for their livestock and a healthy product for the consumers. With an added bonus of a reduced carbon footprint due to local trucking. And Christina is amazing. So very patient with my many questions.

A nurturing environment for cattle, pigs, sheep, raised on grass without any chemicals, artificial nutrients, or drugs. Excellent results and extraordinary flavor from their efforts as demonstrated by many fine local chefs.
