Best Ribeye I have ever had. So tender. Nice and thick, great flavor and just the right amount of bone and fat. I tell you this is the best meat I have ever experienced.
We purchased 1/4 cow. We learned about a few new cuts and how to cook them. The only cut we didn’t love was the short ribs that were too fatty. The meat was extraordinary good from the perspective of 2 foodies that cook everything from scratch.
Can’t say anything about the beef, but we did purchase pork from Highland. It must have been a anorexic pig because the ribs had almost no meat on them. Chops were very small as well. We got brats made that were extremely dry, but that may have more to do with the processing place.
I bought three beef products from Highland Spring Farm. My expectation was high considering the price that I paid for the beef. I purchased a chuck roast, a flat iron steak, and beef short ribs. Regretfully, all three products were inexcusably tough. I know that beef ribs are normally a fatty cut, but these ribs had entirely too much fat for the price per pound. I would not recommend this beef to a serious cook.
This farm is the real deal! Happy animals grazing in their natural environments; they are well cared for by amazing people. This family-run production takes pride in their work and it shows all the way through. If you ever get a chance to visit and support Kevin and his farm, you won't be disappointed!
