I don't post reviews ever but it bothers me that people will post reviews like these without knowledge of the subject. We have been using Hart Farms for years now. They are great! Always friendly, always able to get us in. We have referred many others to him who have had the same great experience. We have sold whole and half freezer beefs to people in the past and it is hard to get them to understand how processing a beef works. For example: A live weight beef of 930 would normally dress out around 60%, less if it is grass fed and finished. This is called the carcass weight, or the weight after the hide, organs, hooves, and head are removed. At 60% of 930 that would be 558 carcass weight. That 558# includes muscle and bones like the ribs, backbone, leg bones etc. Those bones make up a lot of inedible weight. So now the beef is cut into steaks, roast and ground beef. The meat you get back is usually around 50-60% of your carcass weight. If you get all boneless cuts that number could be lower since bones add weight to the final product. Lets say you get all boneless cuts and you get back 50% of your carcass weight that comes out to 279lbs. Thank you Chuck for the work you do! If you are looking for a good butcher this is the place.

We were charged a good amount more than the place we normally go and received mostly ground beef in poor packaging that looked very unprofessional. It was also varying weights when each pack of ground beef should be 1 pound or at least close to it. Definitely will not be using them again

Had to pay in cash for processing when deer was dropped off and then they charged me more money when I picked it up.. $85. For 22 pounds of meat.. Never again will use them..

Do not use them, took a cow weighing 1038lbs to them to get ground up in burger, received 153 lbs of ground beef back. I know other farmers that have had same experience.

Dont use unless you only wont half of what you should get. Sent in a 930 pound cow only got 280 pounds this can't be right.

Will never send another steer. Charlie has to stealing the meat. You ask him about it, he wants to fight.
