Andy and Doug are true professionals-- their enthusiasm and extensive expertise brings about an approachability to something so seemingly complex and intimidating as harvesting and breakdown of a whole hog. Hand Hewn Farm's four day workshop teaches fundamentals grounded in both old world technique and modern science. I left with the knowledge and confidence to apply these learnings back at home. Andy and Doug's passion for the craft is contagious, I cannot recommend their classes enough!
Andy and Doug ran an absolutely incredible workshop at Wolfpine Collective in Maine. They are incredibly knowledgeable, fantastic teachers, down to earth folk. If you get the chance (and are into the whole process) I highly recommend attending a class with them.
Just finished the 4-day Charcuterie Intensive at Hand Hewn Farm… WOW! I mean WOW! it was phenomenal. Andy and Doug are meat masters, blending old-world techniques with hands-on learning and a side of history. Their passion, patience, and skill make even newbies feel confident with a knife and a whole hog. We’re not farmers, but we are food lovers with hog access, and we left with serious skills and full hearts. Their teaching is Top-notch! Plus they are fantastic hosts, we ate like kings and got to try some interesting hog recipes. If I could give ten stars, I would... Alas I’ll settle for five with a side of prosciutto. 🐖!
Doug and Andy provide a detailed experience covering hog butchering and processes to achieve artisinal charcuterie, such as Capicola, salami, prosciutto, bacon, and many other dishes . No part of the pig was wasted! It was an informative and enjoyable workshop and I would highly recommend the experience. Whether you are a foodie, chef, farmer, or just want to learn the different cuts of meat and have hands on participation in preparing amazing heirloom charcuterie and unusual dishes. Andy and Doug are wonderful hosts! We ate well, had great fellowship and learned much!
I returned yesterday from my third trip to see Andy and Doug at Hand Hewn Farm over the past 4 years. They have taught me everything that I know about Charcuterie - preparation and curing meats well. Their teaching methods will return predictable results for any novice. If you want to learn about pig butchery and charcuterie, there is no better place on the planet. Their classes cater to both the homesteader and foodie. Both groups will have all their expectations met. The cost for their events is a steal. If you put into practice what you learn, it will change your life and everything you know about the "The Pig".

We had a wonderful time learning. It was a busy 4 days. Learning from Doug and Andy was like learning from family. If you want a hands on experience from individuals that not only share but have knowledge that exceeds your expectations, this is the class for you.
Andy and Doug are extremely knowledgeable and great teachers making the 4 day whole hog/charcuterie workshop is second to none. The hands on learning allows individuals of all different skill and knowledge levels to feel comfortable asking questions and trying new techniques. I would highly recommend this one of a kind experience.

We have wanted to take this workshop for a couple years and my husband and I were finally able to do so. They have managed to make this workshop into an art form and every little detail has been meticulously thought of. They are both amazing teachers, and this was worth every penny to introduce us into the world of harvest and curing pork.
