Katy’s greatest meat lovers “secret” is this Amazing butcher shop and Texas market. Felix Florez is the owner operator and he is a 7th generation Texan and Rancher, a gourmet chef and a Sommolier. What other institution can you get top of the line aged meats, local eggs, home made butter and sausage and have it paired with a 98 point Syrah? It’s hard to call yourself a foodie if you don’t frequent this place:-) very impressed.

I'm still reeling from my incredible experience at Cherry Block Craft Butcher & Texas Market in old Katy! As a Brazilian native, I know my meat, and this place exceeded my expectations in every way. From the moment I walked in, I was treated with care and respect by the friendly staff, particularly Lindora, who was super polite and attentive. The variety of meats, including wild game options, was impressive, and the quality was top-notch. I purchased the picanha, which was buttery and hands-down the best I've had in the USA! The wine and seasoning selection was also impressive, and I loved the funny cups - a great touch! My only minor issue was with the 32-pound pork leg I purchased, which wasn't as fresh as I had hoped. The skin was quite hard, making it challenging for my mom to prepare, but the inside was delicious, juicy, and tender!! However, I'll definitely return and call ahead next time to request a fresher cut. You won me over with your exceptional customer service, vast selection, and commitment to quality. If you're a meat lover like me, do yourself a favor and visit this hidden gem. You won't be disappointed!

My visit to Cherry Block Butcher was an absolute delight! The Denver beef was incredibly tender and bursting with flavor, making every bite a true treat. The jalapeño poppers were huge, perfectly prepared, and packed with just the right amount of spice and savoriness. It was hands-down the best lunch I’ve ever had! The welcoming atmosphere and top-notch quality have me eager to return. Highly recommend Cherry Block Butcher for an unforgettable experience!

I have visited this butcher only a handful of times. My first visit I purchased a brisket that when I opened the package was soured and had to return it. They did apologize and gave me a fresh cut brisket to make amends. The second time I went and purchased some hamburger meat that ended up tasting bland like it had old meat mixed in with it. It was pale and lacked the fresh redness in color and typical fresh flavor you’d expect from good meat. I just decided to stop in again to talk to someone about the dry aged meat as I remembered they had a cooler with dry aged meat when I had stopped in before. Having recently been turned on to dry aged I wanted to explore and purchase some steaks to cook for an upcoming special dinner. I have been studying the process somewhat and have been left intrigued with this process. I entered the store and walked around looking for someone to help. There was no employee anywhere except someone working in the butcher section that made eye contact with me, didn’t acknowledge my presence and continued to work. I walked around the store for a few minutes and studied the dry aged cooler which then began to notice the cooler was a home made system and was also being used to store various other items like soda cans, beer cans and various other things that would need to be cooled. The problem is this contaminates the dry aged cooler with entering and exiting the cooler at will along with the contamination of the items being stored in with the meat. I saw random extension cords, power strips, cardboard boxes and the general appearance of clutter inside of the meat cooler which should be only used for the storage of the meat as it is being aged. The meat also had mold growing on it which isn’t in itself bad as it can be trimmed off before cooking but is an indicator that the humidity and air flow isn’t ideal in the cooler for the dry aging process to be at its best leading to the conclusion that the meat won’t be the superior dry aged meat you think you’re getting. Witnessing this in addition to still not having anyone acknowledge my presence for several minutes helped make my mind up that this establishment is poorly managed and has met my 3x rule. I would not recommend this place and have been let down with the service here and quality of product they offer. I typically do not review businesses but feel compelled to do so for this store’s feedback and growth as well as customer’s a sneak peak into what could happen if they decide to shop here.

What a gem! I am a personal chef and traveled to Katy from out of state for work. Needed several chateauxbriands and a brisket. The guy helping me was quick, efficient, and prepped everything beautifully - I love that they vacuum seal everything! Most places just wrap it in paper, which tends to leak and is suboptimal for storage. Prices are fair, service is top notch, as is the meat. Cannot say enough good things about this place! Just wish I could bring it back home with me!

First time I came I wanted to get St. Louis Style pork Ribs. The counter guy brought out spare ribs and I proceeded to explain to this person that St. Luis style ribs come from spare ribs and how they are cut but said I would trim them myself. He didn’t know the difference. Red Flag that a guy at a butcher shop didn’t know that. Got home and the spare ribs were horribly butchered so it was hard to cut a good rectangular St Louis from them. Flavor was okay but no better than HEB or Kroger. Went back again to get a whole chicken. The butcher explained that the chicken was a retired laying hen from a local farm. I asked “wouldn’t an older hen be tougher since younger birds are more tender” to which he said “I don’t know.” I’m not a butcher or even an amateur meat enthusiast but it seems I know more about butchering than these butchers.

Drove by on the way home from another meat market. It’s comforting to know that Katy has a farm to market craft butcher. Family owned store. Knowledgeable. Love supporting the local business of our Katy town. They know their meats and more.. they are supporting the community by sourcing their products from local farmers and artisans.
